Threw this breakfast together this morning. Mixed fresh basil paste into scrambled eggs. Topped it with salsa, avocado, sour cream, and garnished with fresh parsley and sriracha. I am a sucker for mixing tangy, creamy sour cream with anything spicy and the herbal, buttery flavor of the eggs was a […]
What I’m Eating
Last night I whipped up a sriracha mayo (equal parts of each) for some tacos and I really enjoyed it. I had some leftover today so I put it over an egg and it was really yummy. I hope it’s obvious by now but I love eggs 🙂
Made some pretty darn delicious sardine tacos tonight for dinner with garlic, onions, green chilies, mini sweet peppers, and mushrooms, then topped with a sauce equal parts sriracha and mayo (thanks @foodheaven for the sauce idea!), and finally some fresh grated parm on top.
Julia got an opportunity to use the first basil from our newly planted herb garden. It was so good! This is my first time ever growing culinary herbs and I am EXCITED. I’ve never had much of a green thumb but these plants are my new babies and I can’t […]
These oven roasted French fries were a perfect accompaniment to dinner tonight. Though slightly overcooked (whoops!), they turned out wonderfully. Crispy, salty, fatty, crunchy, carb-y – what’s not to like?
This was an amazing meal. I hadn’t cooked eggplant or zucchini for a long time but they both turned out so good. The eggplant was perfectly tender with a nice balance of sweetness from the caramelized onions. The key to roasting eggplant is to cook it for a LONG time […]
I love tacos. You can just take a tortilla and throw in some random ingredients and it’s usually delicious. It’s hard to mess up a taco, in my opinion. For a lot of these, I’ve been using sardines or canned salmon with whatever random veggies I happen to feel like […]
I kept seeing this idea everywhere, I think originally starting with some street food video or something. It looked so good. I add my own twists, with artisan bread and salt sprinkled on top. It was BOMB. Btw, I used fresh grated colby jack and parmesan cheese. SO GOOD. While […]
Black bean stew featuring: homemade veggie stock, dry black beans soaked overnight, onions, bell pepper, carrots, celery, jalapeño, garlic, and fresh roma tomatoes. It tasted really good but I think I still need to tweak some more variables, including cooking time, salt, seasoning, and soaking methods. I tried something new […]
Have some baguette and canned salmon but not sure what to do with it? Here’s a little thing I made to curb my hunger while I make black bean stew this afternoon. French baguette, olive oil, canned Alaskan salmon, rosemary, fresh grated parm, parsley, bake at 350F for ten minutes, […]
